Salad
- 1/2 Bunch Kale, and sliced thin
- 1/4 Purple Cabbage, cut thin
- 1 Bag Kelp Noodles (rinse/drain/cut)
- 2 Carrots, cut Julienne-style at the smallest setting
Peanut Sauce
- 1 T Raw, Freshly Ground Peanut Butter
- 1 T Miso
- 1/2 Lemon, Juiced
- 2 Dates
- 3/4 t Chili Powder
- 1 Garlic Clove
- 1 t Black Sesame Seeds (Optional)
- 1/2 Orange, Juiced
Salad
- Place the kelp noodles in a colander and rinse well.
- Drain and let sit.
- Clean and remove the large stem from the kale.
- Slice the kale and purple cabbage and place in large bowl.
- Add the Julienne carrots.
- After the kelp noodles have drained well, use kitchen scissors to cut the noodles into 2-3 inch pieces and add to the salad.
- Toss well.
- You may need to use your hands.
Peanut Sauce
- Blend all ingredients together in a VitaMix blender.
- You may need to add a little extra orange juice or water for the desired consistency.
- Drizzle Peanut Sauce all over the salad and toss well.
Notes
- You may want to double the peanut sauce recipe because it is so flavorful and your guests may want to add a little more!
