Salad
  1. 1/2 Bunch Kale, and sliced thin
  2. 1/4 Purple Cabbage, cut thin
  3. 1 Bag Kelp Noodles (rinse/drain/cut)
  4. 2 Carrots, cut Julienne-style at the smallest setting
Peanut Sauce
  1. 1 T Raw, Freshly Ground Peanut Butter
  2. 1 T Miso
  3. 1/2 Lemon, Juiced
  4. 2 Dates
  5. 3/4 t Chili Powder
  6. 1 Garlic Clove
  7. 1 t Black Sesame Seeds (Optional)
  8. 1/2 Orange, Juiced
Salad
  1. Place the kelp noodles in a colander and rinse well.
  2. Drain and let sit.
  3. Clean and remove the large stem from the kale.
  4. Slice the kale and purple cabbage and place in large bowl.
  5. Add the Julienne carrots.
  6. After the kelp noodles have drained well, use kitchen scissors to cut the noodles into 2-3 inch pieces and add to the salad.
  7. Toss well.
  8. You may need to use your hands.
Peanut Sauce
  1. Blend all ingredients together in a VitaMix blender.
  2. You may need to add a little extra orange juice or water for the desired consistency.
  3. Drizzle Peanut Sauce all over the salad and toss well.
Notes
  1. You may want to double the peanut sauce recipe because it is so flavorful and your guests may want to add a little more!
