Broth Ingredients
- 3 C Water
- 1/4 C Olive Oil
- 4 Medium Sized Lemons, juiced
- 1 Piece of Ginger (about 2 inches)
- 2 Jalapeno Peppers
- 1 t Salt
- 8 Dates
- 4 Stalks of Celery
- 1 Bunch Cilantro
Vegetable Additions
- 1 Daikon Radish, shredded
- 1 Carrot, shredded
- 1 Piece of Cauliflower, cut up small
- 1 Red Bell Pepper, diced very small
- 1 Avocado, chopped into bite-sized pieces
Garnish Ingredients
- 1/2 Green Onion
- 1/4 C Clover Sprouts
- 3 Cherry Tomatoes cut in halves.
Broth
- Blend the broth ingredients in a blender until warmed.
- Pour into two large soup bowls.
Vegetable Additions
- Divide the vegetables in half and mix them into each bowl.
Garnish
- Sprinkle the garnish ingredients on top of each bowl.
Notes
- This soup is a keeper. It’s my favorite soup. It’s hearty and healthy and very satisfying. This recipes makes two very large helpings or it can be split into four smaller bowls.
- A VitaMix Blender is very handy for making soups because it will warm the soup as it blends.
