Broth Ingredients
  1. 3 C Water
  2. 1/4 C Olive Oil
  3. 4 Medium Sized Lemons, juiced
  4. 1 Piece of Ginger (about 2 inches)
  5. 2 Jalapeno Peppers
  6. 1 t Salt
  7. 8 Dates
  8. 4 Stalks of Celery
  9. 1 Bunch Cilantro
Vegetable Additions
  1. 1 Daikon Radish, shredded
  2. 1 Carrot, shredded
  3. 1 Piece of Cauliflower, cut up small
  4. 1 Red Bell Pepper, diced very small
  5. 1 Avocado, chopped into bite-sized pieces
Garnish Ingredients
  1. 1/2 Green Onion
  2. 1/4 C Clover Sprouts
  3. 3 Cherry Tomatoes cut in halves.
Broth
  1. Blend the broth ingredients in a blender until warmed.
  2. Pour into two large soup bowls.
Vegetable Additions
  1. Divide the vegetables in half and mix them into each bowl.
Garnish
  1. Sprinkle the garnish ingredients on top of each bowl.
Notes
  1. This soup is a keeper. It’s my favorite soup. It’s hearty and healthy and very satisfying. This recipes makes two very large helpings or it can be split into four smaller bowls.
  2. A VitaMix Blender is very handy for making soups because it will warm the soup as it blends.
