Crust
  1. 4 C Raisins
  2. 4 C Pecans
Frosting
  1. 2 C Dates, pitted
  2. 1/2 Fresh or Frozen Raspberries
  3. 1/4 C Lemon juiced
Topping
  1. 1 Small Basket of Strawberries or berries of any kind
Crust
  1. Blend pecans in food processor until it looks like a fine flour.
  2. Add the raisins and blend well. Blend well until the dough forms a ball.
  3. It should look like a fudge not grainy.
  4. Place the fudge ball onto a plate and form into a 3/4 inch base.
Frosting
  1. Blend the ingredients for the frosting until creamy and smooth.
  2. Ice the base with the frosting.
Topping
  1. Place any kind of berries all over the top.
  2. I like to use sliced strawberries, blueberries, and fresh raspberries.
  3. Any combination works well.
  4. Place into the refrigerator for a few hours.
  5. I like to make it up the day before a potluck so it’s easy to slice. Enjoy! Serves 8 to 10.
