Crust
- 4 C Raisins
- 4 C Pecans
Frosting
- 2 C Dates, pitted
- 1/2 Fresh or Frozen Raspberries
- 1/4 C Lemon juiced
Topping
- 1 Small Basket of Strawberries or berries of any kind
Crust
- Blend pecans in food processor until it looks like a fine flour.
- Add the raisins and blend well. Blend well until the dough forms a ball.
- It should look like a fudge not grainy.
- Place the fudge ball onto a plate and form into a 3/4 inch base.
Frosting
- Blend the ingredients for the frosting until creamy and smooth.
- Ice the base with the frosting.
Topping
- Place any kind of berries all over the top.
- I like to use sliced strawberries, blueberries, and fresh raspberries.
- Any combination works well.
- Place into the refrigerator for a few hours.
- I like to make it up the day before a potluck so it’s easy to slice. Enjoy! Serves 8 to 10.
