Bite the Apple Cookie

This is one of my favorites! This is a delicious cookie that I got from a friend, Carol, at a Bible camp I attended a few years ago. I use ripe red apples, raisins, and LOTS of ground cinnamon, sweetened with raw agave nectar which is dehydrated into soft, homemade-style cookies.

Ingredients
- 2 Pounds Red Apples, cored and peeled, 5-6 apples, such as Fuji or Gala
- 1 C Agave Nectar
- 1 3/4 C Almonds, ground in a food processor
- 1 1/4 C Raisins
- 1/4 C Cinnamon
Instructions
- In a food processor, slice half of the apples with the slicing disc.
- Transfer the sliced apples to a mixing bowl.
- Slice the remaining apples in the food processor with the shredding disc and then add the shredded apples to the sliced apples in the mixing bowl.
- Add the agave nectar, ground almonds, raisins, and cinnamon to the bowl and mix well with a spatula.
- With your hands, press the mixture into about 20 round, flat cookies approximately 2 inches thick and lay them on dehydrator sheets.
- Dehydrate at 105 degrees for approximately 24 hours.
Notes
- After a couple of hours the juices on the dehydrator will have started to thicken so you can then push it back towards the cookie so that you don’t lose the flavor.
- You can use less cinnamon if the cookies are too sweet for you.
- These are so tasty and healthy, you will be amazed!
