Apple Cookies

Apple Cookies
Yields 20
This is one of my favorites! This is a delicious cookie that I got from a new friend at a Bible camp I attended a few years ago. I use ripe red apples, raisins, and LOTS of ground cinnamon, sweetened with raw agave nectar which is dehydrated into soft, homemade-style cookies.

Ingredients
  1. 2 Pounds Red Apples, cored and peeled, 5-6 apples, such as Fuji or Gala
  2. 1 C Agave Nectar
  3. 1 3/4 C Almonds, ground in a food processor
  4. 1 1/4 C Raisins
  5. 1/4 C Cinnamon
Instructions
  1. In a food processor, slice half of the apples with the slicing disc.
  2. Transfer the sliced apples to a mixing bowl.
  3. Shred the remaining apples in the food processor with the shredding disc.
  4. Then add the shredded apples to the sliced apples in the mixing bowl.
  5. Add the agave nectar, ground almonds, raisins, and cinnamon to the bowl and mix well with a spatula.
  6. With your hands, press the mixture into about 20 round, flat cookies approximately 2 inches thick and lay them on dehydrator sheets.
  7. Dehydrate at 105 degrees for approximately 24 hours.
Notes
  1. After a couple of hours, the juices on the dehydrator sheets will have started to thicken so you can then push it back towards the cookie so that you don’t lose the flavor.
  2. You can use less cinnamon if the cookies are too sweet for you.
  3. These are so tasty and healthy, you will be amazed!
