Our star fruit tree is producing three to four times a year now that it has matured. We are very blessed! But what shall we do with all of this fruit? I have found many uses for it since it tastes so good. Just last week I decided to try making this star fruit salsa with items I had on hand. I have also made star fruit smoothies which resemble a shave ice with the sweet flavor of the fruit and is perfect on a hot day. Since we have a lot of hot days on Maui I like to eat something refreshing and cold, especially when we get home from the beach. That is when I go to the freezer and find the bag of sliced star fruit that I placed in there the day before. That really hits the spot. There are so many things you can do when you have an abundance of blessings in the garden and one of them is to gift your friends and family with them!
